Ingredients:

  • 3 cups rolled oats
  • 1 cup nuts of your choice (almonds, walnuts, pecans), roughly chopped
  • 1/2 cup seeds (pumpkin seeds, sunflower seeds)
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup honey or maple syrup (adjust according to desired sweetness)
  • 2 tablespoons coconut oil (or any vegetable oil)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 teaspoon salt
  • 1 cup dried fruits (raisins, cranberries, apricots), chopped (optional)
  • Recipe:

    In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, shredded coconut, cinnamon (if using), and salt. Mix well to evenly distribute the ingredients. In a small saucepan, heat the honey or maple syrup, coconut oil, and vanilla extract over low heat. Stir until the mixture is well combined and the coconut oil has melted.

    Pour the liquid mixture over the dry ingredients in the mixing bowl. Use a spatula or wooden spoon to thoroughly coat the oats and nuts with the liquid mixture. Ensure that all the dry ingredients are well coated.

    Heat a large non-stick skillet or frying pan over medium heat. Transfer the granola mixture to the skillet. Cook the granola mixture on the stovetop, stirring frequently to prevent burning. Continue cooking for about 10-15 minutes, or until the oats and nuts turn golden brown and crispy. Remove the skillet from the heat and let the granola cool completely. As it cools, it will become crunchy.

    Once the granola has cooled, you can add the dried fruits if desired. Mix in the chopped dried fruits and enjoy your homemade no-bake granola with yogurt, milk, or as a topping for smoothie bowls.
